Allergy modifications: Since my son cannot consume eggs in any form, I had to make some adjustments to this recipe. The recipe calls for two eggs. I replaced one egg with 1/4 cup pureed sugar pumpkin freshly plucked from the pumpkin patch and oven roasted. The pumpkin added to the seasonal flavor and served to provide moisture in the cake. I replaced the second egg with my stand-by egg replacement Ener-G, you can find it here. I love Ener-G, it is a reliable replacement for all of my baking recipes and come in the most amzing retro box that reminds me of my mother’s old cookbooks. I also added a teaspoon of baking soda as a leavening agent to give the batter some lift.
